Thousand Layer Lasagna

Ingredients

  • Lasagna sheets (fresh or dried)
  • Olive oil
  • Mushrooms, sliced
  • Onion, chopped
  • Garlic, minced
  • Ricotta cheese
  • Parmesan cheese
  • Lemon zest
  • Fresh basil
  • Salt & pepper

Instructions

  1. Preheat oven to 180°C.
  2. Cook lasagna sheets in salted boiling water, then cool in ice water.
  3. Sauté onion and garlic in olive oil until fragrant.
  4. Add mushrooms and cook until golden and soft.
  5. Season with salt, pepper, and lemon zest.
  6. Butter a baking tray and sprinkle lemon zest.
  7. Spread a thin layer of mushroom sauce in tray.
  8. Add pasta sheet layer.
  9. Add dollops of ricotta and fresh basil.
  10. Repeat layers until ingredients are used.
  11. Top with Parmesan cheese.
  12. Bake for 25–30 minutes until golden.
  13. Let rest for 5 minutes before slicing.
